All About That Base

Have you ever found yourself staring at your ice cream cone wondering what the magic of ice cream production entails? Well, to remain transparent in every aspect of our process, we thought we’d offer you a glimpse into our world. Welcome! Our goal is to educate and intrigue you, and hopefully leave you with an intense desire for a scoop or three of the sweet deliciousness we pride ourselves on.
First things first, all our ice creams and gelatos are specially handcrafted from the very beginning. Roughly once a week, we measure, mix, and cook our ice cream and gelato bases from scratch. The majority of ice cream shops in the country buy a premade base and simply add in flavorings to make it their own. We’re not about that. Each gallon of milk and cream, hand separated egg, can of pure, unsweetened coconut milk, and pound (upon pound upon pound) of sugar are added to a giant, 100 gal vat (also known as a pasteurizer) by our two-person production crew. The base is then heated up to 180F and cooled back down to about 40F, ready to take on the identity of each unique flavor. By doing so, we are in complete control of flavor profiles, fat and sugar contents, and overall consistency of our product. And we wouldn’t want it any other way. At Love’s, we strive to provide you with #onlygoodthings, and we achieve that by having our hands in every part of the process and by being painstakingly detailed in each and every recipe.
None of our ice creams, gelatos, cookies, sauces, etc. etc. would be any good if we didn’t possess the passion and love for our craft. Making ice cream can either be a standardized mix of unnatural flavorings and colorings to create a cheap, dime-a-dozen product, or it can be an expertly crafted, culinary driven process honed carefully overtime to produce unforgettable frozen decadence. We, at Love’s, never shy away from doing things the right way. And we do so because we care. We care about our environment, local food sources, like minded vendors and retailers, and our employees. And by doing so, we spread the love to you, our wonderfully sweet toothed customers.
